On Monday 19th June, SUSHISAMBA hosted a collaborative dinner in SUSHISAMBA London to raise funds and awareness for our charitable partner, Cool Earth, a UK-based charity committed to halting the destruction of the rainforest by working side-by-side with the communities who live there.

Following his trip to the Peruvian rainforest with Cool Earth to see their work first hand in May, SUSHISAMBA Corporate Chef Claudio Cardoso created ‘Into the Amazon: A Dining Adventure’ which featured dishes inspired by his trip as well as ingredients sourced directly from the Asháninka community in the rainforest. Dishes included a Corn Seviche using three different types of Peruvian corn, Cerdo de la Selva pork belly which featured Asháninka coffee as well a dish inspired by the landscape of the Yuca Plantation itself.

Tickets sold out within two days of going public and a­ll ticket funds were donated directly to the charity.

‘Into the Amazon’ lives on via the ‘Legacy Menu’ on our All Day Menu which features three dishes using ingredients that are sourced and grown in the rainforest that allows us to continue to support the Asháninka communities by buying ingredients directly from their projects.
