• 2 cups short grained rice
  • 2 cups water
  • 2 tbsp rice vinegar
  • 2 tbsp sugar
  • 2 tbsp kosher salt


Rinse uncooked rice until water runs clear and place in a medium saucepan with two cups of water. Bring to a boil, uncovered, and cook for 15 minutes on lowest setting, covered. Remove from the heat and let stand, covered for 10 minutes. Combine rice vinegar, sugar and salt and heat in a saucepan. Add mixture to rice and fold thoroughly. Cool completely before making sushi.
